Tina Griffin will become Northwest's new director of campus dining following the retirement of Barry Beacom, the current director, on Friday, April 3.

Like Beacom, Griffin is an employee of Aramark Corp., a Philadelphia-based food, facilities and apparel service provider that manages the University's food and maintenance operations.

Griffin, who holds a bachelor's degree in hotel, restaurant and institution management from Kansas State University, has served as student union senior food service director at her alma mater since March 2004.

She was director of operations for Saint Louis University from 2002-'04 and held a variety of Aramark food-service positions during the 1990s at Wichita State University, including catering director, resident operations manager, assistant food service director and food service director.

In addition, Griffin is a former Aramark food service director for Raytheon Aircraft Co. and worked as a territory sales manager for Harker's Distribution Inc., an Iowa-based meat distributor.

At Northwest, she will be responsible for all areas of the campus' retail food service operation, including dining, catering and vending. She will also oversee Aramark's partnership role in offering concessions at University athletic events and other attractions.

As director, Griffin will lead a staff of more than 100 full-time employees and 150 student workers.

Campus Dining serves all University divisions and offers a wide variety of meal, snack and grocery options to students, faculty, staff and visitors. Existing retail outlets on campus include the Bearcat Food Court, JW's Grille, The Runt ice cream shop and the Java City coffee shop in the J.W. Jones Student Union as well as a second Java City in The Station student center and convenience stores located in The Station and Forest Village Apartments.

Beacom, who is ending a two-decade career at the University, came to Northwest in 1989 as an Aramark location manager. He was promoted to director of campus dining in August 1997.
